Raspberry Beet Smoothie Bowl

This vibrant, nutrient-packed dish is not only visually appealing but also full of health benefits. Raspberries and Beets are superfoods in their own right but add them together and you have a nutrient dense, nourishing dish that tastes great and makes you feel even better!


  • Raspberries: These little berries are rich in fiber, vitamins C and K, and antioxidants like quercetin. They support immune function, skin health, and reduce inflammation. They also contain fiber and have a low glycemic index, meaning they won't spike your blood sugar.

  • Beets: Beets are an excellent source of folate, manganese, and potassium. They are rich in antioxidants, help improve blood flow, lower blood pressure, and support liver detoxification.

Raspberry Beet Smoothie Bowl, Nourished Roots

Ingredients:

  • 1 cup frozen raspberries, additional for garnish

  • 1 medium beet, chopped and frozen

  • 1/2 cup coconut yogurt

  • 1/4 cup unsweetened almond milk

  • 2 Tbsp hemp seeds

  • 1 scoop vanilla protein powder

  • 1 Tbsp cacao nibs

  • 1 Tbsp sliced almonds

  • 1 Tbsp unsweetened shredded coconut


Directions: Add frozen raspberries, beet, almond milk, yogurt, hemp seeds, protein powder to a blender. Blend on high until smooth. Transfer smoothie to a bowl and top with cacao nibs, almonds, coconut.


Notes: You can switch it up and add chia seeds, pumpkin seeds, or bananas.
